For more than 100 years, this tea (Xua Ya) has been produced in the southeast Chinese mountains at an altitude of about 3300 ft. The name comes from the occasional, white-colored patches that spot the leaves. It is hand-plucked and oxidized for a very short time in order to save this tea’s “green soul.” This is a two leaf and one bud tea that creates a champagne color, and a mild, fruity taste.
