Flavor Profile: Zingy, Sweet Corn, Brothy

Yellow tea is pretty rare to come by. Think of this leaf as a softer and sweeter green tea. Green tea leaves go through an additional “yellowing’ step where they are wrapped and rested. The leaves then sweat, allowing the scent of their own essential oils to be sealed into the tea. These leaves are shared by our friend Shirley over at Brew and Blossom, whose father proudly grows and crafts this tea. The love for his daughter and his determination to make a tea that pleases her is a dance between their two souls that shines in every single leaf of this tea. This tea is sweet and calming with notes of corn flakes, pear skin and artichoke heart. Crisp and soothing, this is a tea that all tea lovers must experience.
