Flavor Profile: Stone Fruit, Incense, Tangy
We sourced this lovely Year of the Dog Pu-erh Cake from the wonderful family-owned Aroma Tea House out of Vancouver B.C., who wanted to commemorate our 8th anniversary with a cake just as old. Aroma Tea House represents three generations of tea expertise; Lam Kwan Yin made foundational contributions to modern pu-erh identification and passed on this knowledge and enthusiasm to his daughter and grandson. That history of discernment is palpable in this tea, which has a long, complex evolution while remaining friendly and sweet.
The relatively short eight years of aging has considerably shaved off its edges, leading to minimal bitterness and astringency that makes way into a refreshing fruity-sweet huigan. Opening with subtle incense and aged wood, this tea will then take you on a tour of a variety of stone fruit, from juicy apricot to crisp apple and plum, even finishing with a date-like sticky sweetness in the later steeps – all backed up by a gentle aged tangerine peel note throughout.
