Shan Lin Xi
This tea comes from the mountains of central Taiwan. Shan Lin Xi is a Gao Shan (high-mountain) variety of oolong. This tea grows in an area close to where Tung Ting is grown, but at a much higher altitude. It is withered in the sun for a few hours, rolled, and roasted at a low-temperature. The resulting flavor of this Gao Shan is a creaminess, equal parts vanilla and floral, and the aroma is of sweet cherry.
